Grilled Cheese Burrito Taco Bell

Ingredients

Serves 2- 4

Beef

  • 1lb ground beef
  • 1 teaspoon granulated garlic
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Chipotle Sour Cream

  • 1 cup sour cream
  • 1 tablespoons chipotle hot sauce
  • ¼ teaspoon cayenne pepper

Other Ingredients

  • 1 cup cooked spanish rice
  • 3 cups shredded cheddar jack cheese, separated
  • 1 cup red tortilla strips
  • 2-3 tablespoons vegetable oil
  • 4 extra large burrito tortillas

Method

  1. Heat a large nonstick skillet over medium heat
  2. Add the ground beef and break the meat up
  3. Add the granulated garlic, chili powder, salt and pepper to the beef
  4. Let the beef cook in the spices until it is fully cooked, 5-7 minutes
  5. Remove the beef from the heat and set aside

Chipotle Sour Cream

  1. Add the sour cream, chipotle hot sauce, and cayenne pepper to a bowl
  2. Mix until well combined

The Burrito

  1. Add ¼ of the beef to a large bowl
  2. Add ¼ cup chipotle sour cream
  3. ½ cup cheese, ¼ cup tortilla strips and combine
  4. Add the mixture to a tortilla, fold in 2 sides and roll it into a burrito
  5. Repeat until all 4 burritos are assembled

Cooking

  1. Heat a large nonstick skillet over medium/high heat
  2. Add 1-2 teaspoons of oil to the skillet
  3. Let the burritos cook 4-5 minutes until brown on all sides.
  4. Place the burrito on on a broiler (grill) and top with the cheese
  5. Let the burrito cook with the cheese for 3-4 minutes or until the cheese melts and begins to brown
  6. Let the burritos rest for 1 minutes before serving
