Grilled Seitan Vegetarian Kabobs Recipe

Ingredients

Makes 4 servings

  • 1/3 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon minced fresh oregano or 1 teaspoon dried
  • 1 teaspoon minced fresh thyme or 1/2 teaspoon dried
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound seitan cut into 1-inch cubes
  • 8 ounces small white mushrooms, lightly rinsed and patted dry
  • 2 small zucchini, cut into 1-inch chunks
  • 1 medium yellow bell pepper, cut into 1-inch squares
  • 12 ripe cherry tomatoes

Method

  1. In a medium bowl, combine the vinegar, oil, oregano, thyme, garlic, salt and black pepper
  2. Add the seitan, mushrooms, zucchini, bell pepper and tomatoes, turning to coat
  3. Marinate at room temperature for 30 minutes, turning occasionally
  4. Drain the seitan and vegetables, reserving the marinade
  5. Preheat the grill
  6. * Thread the seitan, mushrooms and tomatoes onto skewers
  7. Place the skewers on the hot grill and cook, turning kabobs once halfway through grilling, about10 minutes total
  8. Drizzle with a small amount of the reserved marinade and serve immediately
