Ham And Mustard Sandwich Recipe

Ingredients

Makes 10

  • 6lb (2.7kg) bone-in joint of ham (check with your butcher whether or not the ham needs soaking, if it does, ask for how long, as this will depend on the salt content)
  • whole cloves
  • scant ¼ cup (50g) light brown packed sugar
  • 3 tbsp whole-grain mustard
  • 10 soft white rolls, split open
  • butter, at room temperature
  • english mustard, to serve

Method

  1. Once the ham is soaked (if necessary) and ready to cook, preheat the oven to 325°F (170°C) Gas 3
  2. Line a baking pan with aluminum foil in both directions, crosswise and lengthwise, so that you are able to then place the ham in the center, and pul the foil up around it to make a tent
  3. Cook the ham in the oven for 2 hours
  4. Remove the ham from the oven and carefully unwrap it
  5. Turn the oven temperature up to 400°F (200°C) Gas 6
  6. Carefully remove the skin from the ham, taking care to leave as much fat behind as possible
  7. Score the fat al over into diamond shapes, then stud each diamond with a clove
  8. Mix the sugar and whole-grain mustard together in a bowl and then rub it al over the ham
  9. Cook in the oven for a further 30 minutes, until glazed and nice and sticky
  10. Remove from the oven, cover with clean foil, and let the ham rest for about 30 minutes before slicing; I know. it’s hard
  11. Serve the warm ham slices in the white rol s with plenty of butter and English mustard-as much as your sinuses can handle
