Ice Cream Crepes Recipe

Ingredients

Makes 4 servings

  • 1 1/2 pints vegan vanilla ice cream, softened
  • 4 Vegan Dessert Crepes
  • 2 tablespoons vegan margarine
  • 1/4 confectioners sugar
  • 1/4 cup fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 1/4 cup Grand Marnier or other orange-flavored liqueur

Method

  1. Use a large knife to cut one pint of ice cream into quarters vertically (you can do this while the ice cream is still in the container)
  2. Peel away the container and discard it
  3. Arrange one whole quarter and 1/4 cup of the remaining 1/2 pint of ice cream end to end on a piece of plastic wrap, enclose it in the wrap and use your hands to shape it into a log
  4. Repeat with the remaining ice cream to make four logs
  5. Roll each of the ice cream logs inside each of the crepes
  6. Once the crepes are filled, freeze them for about 30 minutes to firm up
  7. In a small skillet, heat the margarine over medium heat
  8. Add the sugar
  9. Stir in the orange juice, lemon juice and Grand Marnier
  10. Simmer, cooking off most of the alcohol, about 2 minutes
  11. To serve, place the filled crepes on dessert plates and spoon some of the orange sauce over each crepe
