Kale In Coconut Milk Pressure Cooker Recipe


SERVES 4 – Cooker: 5- to 8- quart – Time: 4 minutes at HIGH pressure

  • 2 tablespoons olive oil
  • 1 medium white onion, thinly sliced
  • 2 bunches kale (about 1 pound), washed well, stemmed, and roughly chopped
  • 1 cup unsweetened coconut milk
  • 2 tablespoons fresh lemon juice
  • sea salt and freshly ground black pepper


  1. Place the oil and onion in a 5- to 8-quart pressure cooker
  2. Turn the heat to medium-high and cook, stirring a few times, until the onion is translucent, 3 to 5 minutes
  3. Add the coconut milk and lemon juice, then the kale, pushing down on it until it wilts enough to fit in the pot
  4. Close and lock the lid
  5. Set the burner heat to high
  6. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  7. Set a timer to cook for 4 minutes
  8. Remove the pot from the heat
  9. Let stand 6 minutes, then open the cooker with the Quick Release method
  10. Be careful of the steam as you remove the lid
  11. Do not drain
  12. Stir
  13. Taste for salt and pepper
  14. Serve immediately
