Keto Angel-Flaked Coconut Recipe


  • 3 tablespoons (40 g) polyol sweetener
  • 80 ml boiling water
  • 2 cups (140 g) shredded coconut meat


  1. In a medium-size mixing bowl, dissolve the polyol sweetener in water
  2. Stir in the coconut, making sure the coconut is evenly damp
  3. Cover the bowl and let it sit for 10 to 15 minutes

Makes 2 cups (180 g), or 16 servings of 2 tablespoons each

  1. Each with trace protein; 2 g carbohydrate; 1 g dietary fiber; 1 g usable carb
  2. Carb count does not include polyol sweetener
