Keto Curried Pumpkin Soup Recipe

Ingredients

  • 1/4 cup (40 g) minced onion
  • 1 clove garlic
  • 1 tablespoon (14 g) butter
  • 1 quart (960 ml) chicken broth
  • 1 1/2 cups (240 g) canned pumpkin
  • 1/2 cup (120 ml) low-carb milk
  • 2 teaspoons curry powder salt and pepper to taste

Method

  1. In a large, heavy-bottomed saucepan, over medium-low heat, saute the onion and garlic in the butter until just softened
  2. Add the chicken broth and simmer for a half an hour
  3. Stir in the canned pumpkin, low-carb milk, and curry powder
  4. Bring back to a simmer and simmer gently for another 15 minutes
  5. Add salt and pepper to taste and then serve

Makes 6 servings

  1. Each with 5 g protein; 7 g carbohydrate; 2 g dietary fiber; 5 g usable carbs
