Lemon-Soaked Banana-Macadamia Bread Recipe

Ingredients

Makes 1 loaf

  • 2 ripe bananas
  • 1/3 cup canola oil
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour ¾ cup sugar
  • 1/2 cup coarsely chopped macadamia nuts
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • zest and juice of 2 lemons
  • 1/2 teaspoon salt

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 9-inch loaf pan and set aside
  3. In a blender or food processor, puree the bananas
  4. Add the oil and vanilla extract and blend until smooth
  5. Set aside
  6. In a large bowl, combine the flour, 1/2 cup of the sugar, macadamia nuts, baking powder, baking soda, lemon zest and salt
  7. Fold in the banana mixture, stirring until just mixed
  8. Scrape the batter into the prepared pan
  9. Bake until golden brown on top and a toothpick inserted in the center comes out clean, 35 to 40 minutes
  10. Let cool in the pan on a wire rack
  11. While the bread is cooling, combine the lemon juice and the remaining 1/4 cup sugar in a small saucepan and simmer over low heat, stirring, until the sugar is dissolved
  12. Set aside to cool
  13. Use a metal skewer or toothpick to poke several holes in the top of the loaf
  14. Pour the syrup over the top of the loaf and let it stand for 10 minutes before removing from the pan and slicing
