Ingredients

  • 1 head cauliflower, cut into florets
  • 1 cup (240 ml) water
  • 1 cup (100 g) Low Carb Potato Substitute
  • 6 teaspoons ranch-style dressing mix
  • 4 scallions, thinly sliced

Method

  1. Place the cauliflower in your slow cooker with the water
  2. Cover the slow cooker, set it to low, and let it cook for 5 hours
  3. Or cook it on high for 3 hours
  4. When the times up, the easiest thing to do is use a hand blender to puree the cauliflower right in the slow cooker
  5. Don’t bother to drain the water first
  6. Whisk in the Ketatoes, ranch dressing mix, and scallions

Makes 6 servings
