Low Fat Shrimp And Spinach Pizza Recipe

Ingredients

  • 1/2 teaspoon olive oil
  • 1/4 cup thinly sliced red onion
  • 3 cups chopped fresh spinach
  • 1/4 teaspoon dried oregano
  • 3/4 cups reduced-fat shredded mozzarella cheese, divided
  • 2 pita breads
  • 2 plum tomatoes, sliced
  • 10 large shrimp, cooked and peeled
  • freshly cracked black pepper, optional
  • Method

  • In small nonstick skillet, over medium heat, heat oil.
  • Saute onion 1 minute.
  • Add spinach; cook until spinach is wilted about 1 minute.
  • Stir in oregano.
  • Preheat oven to 400°F.
  • Sprinkle 1/4 cup mozzarella cheese on each pita bread round.
  • Top with spinach mixture, tomato, shrimp and the remaining 1/2 cup cheese.
  • Place on cookie sheet; bake until cheese is melted, about 10 minutes.
  • Sprinkle with pepper.
  • Makes 2 servings.
  • Preparation time: About 10 minutes.
  • Cooking time: About 12 minutes.
