Low Fat Sweet Onion And Fennel Salsa Recipe

Ingredients

  • 1 cup chopped texas sweet onion
  • 1 cup chopped fennel, white and green parts , plus some leaves
  • 1/2 cup chopped ripe tomatoes
  • 1/4 cup chopped red or yellow bell pepper
  • 1 tablespoon minced jalapeno pepper, or serrano pepper , plus more to taste
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • salt, to taste
  • black pepper, to taste
  • Method

  • In medium bowl, combine onion, fennel, tomatoes, bell pepper, jalapeno pepper, cilantro, oil, salt and pepper.
  • Let stand at room temperature 30 minutes to let flavors blend.
  • Makes 10 servings.
