Low Fat Turkey Potato And Corn Casserole Recipe

Ingredients

  • 1/2 cup green bell pepper, chopped
  • 1/2 cup green onions, sliced, plus
  • 2 tablespoons sliced green onion tops, divided
  • 3 tablespoons low-calorie margarine
  • 15 ounces cream-style corn
  • 2 cups skim milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 cups cooked turkey, cut into 1/2-inch cubes
  • 2 cups instant potato flakes
  • nonstick cooking spray
  • 1/4 cup grated fat-free parmesan cheese

Method

  1. Preheat oven to 375°.
  2. In a 3-quart saucepan, over medium high heat, saute green bell pepper and 1/2 cup green onions in margarine 4 to 5 minutes, until crisp-tender.
  3. Add corn, milk, salt and pepper.
  4. Reduce heat to medium; cook mixture until it begins to bubble and remove from heat.
  5. Fold in turkey and potato flakes.
  6. Pour turkey mixture into a 9-inch square casserole dish lightly coated with cooking spray.
  7. Sprinkle with Parmesan and green onion tops.
  8. Bake about 25 minutes, until top is lightly browned.

Makes 6 servings.
