Ingredients
Servings : 2-4 dishes.
- 1 cup all purpose flour
- 3/4 cup whole wheat flour
- 1/2 cup brown sugar
- 1 teaspoon baking soda
- 1 cup mandarin juice
- 1/4 cup coconut milk
- 1/4 cup coconut oil
- 1 pinch of salt
- 1 teaspoon vanilla extract
Method
- In a bowl, mix the flours with baking soda, salt and brown sugar
- Stir in the mandarin juice, then the coconut milk, oil and vanilla extract
- Grease a 9-inch cake pan and pour the batter into the pan
- Bake in a preheated oven at 350F for 40-50 minutes, or until slightly golden brown and fragrant
