Manicotti Italian Recipe

Ingredients

  • 1 can (8 ounces) tomato sauce
  • 1 packet spaghetti sauce mix
  • 8 manicotti shells, cooked and drained
  • 2 cup grated mozzarella cheese
  • 1 cup cream-style cottage cheese
  • 1/2 cup grated parmesan cheese
  • 2 eggs, beaten
  • 1/4 cup chopped parsley
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Method

  1. Blend tomato sauce, spaghetti sauce mix, and 1 1/2 cup water
  2. Simmer, uncovered for 10-12 minutes
  3. Meanwhile, combine 1 cup mozzarella, cottage cheese, and Parmesan
  4. Add eggs, parsley, salt, and pepper; mix lightly
  5. Stuff manicotti shells with cheese mixture, using about 1/4 cup for each
  6. Pour 1/2 cup of sauce mixture in to 12 x 7 1/2 x 2-inch baking dish
  7. Arrange manicotti in dish; pour remaining sauce atop
  8. Sprinkle with remaining mozzarella
  9. Bake uncovered at 350 until bubbly, 25-30 minutes
