Marsala Carrots Recipe

Ingredients

Makes 4 servings

  • 2 tablespoons vegan margarine
  • 1 pound carrots, cut diagonally into 1/4-inch slices
  • 1 tablespoon sugar
  • salt and freshly ground black pepper
  • 1/2 cup Marsala
  • 1/4 cup water
  • 1/4 cup chopped fresh parsley, for garnish

Method

  1. In a large skillet, melt the margarine over medium heat
  2. Add the carrots and toss well to coat evenly with the margarine
  3. Cover and cook, stirring occasionally, for 5 minutes
  4. Sprinkle the sugar over the carrots and season with salt and pepper to taste, tossing to coat
  5. Add the Marsala and water
  6. Reduce heat to low, cover and simmer until the carrots are tender, about 15 minutes
  7. Uncover and cook over medium-high heat until the liquid is reduced into a syrupy sauce, stirring to prevent burning
  8. Transfer to a serving bowl and sprinkle with parsley
  9. Serve immediately
