Meatball Stew Slow Cooker Recipe

Ingredients

  • 1 pound (900 g) meatballs, basic or turkey
  • 6 medium potatoes, cubed
  • 1 cup (160 g) sliced onion
  • 1½ cups (195 g) sliced carrots
  • 1 cup (240 g) low-salt ketchup
  • 1 cup (235 ml) water
  • 2 tbsps (28 ml) vinegar
  • 1 tsp basil
  • 1 tsp oregano
  • ¼ teaspoon pepper

Method

  1. Brown meatballs in skillet over medium heat
  2. Drain
  3. Place potatoes, onion, and carrots in slow cooker
  4. Top with meatballs
  5. Combine ketchup, water, vinegar, basil, oregano, and pepper
  6. Pour over meatballs
  7. Cover and cook on high 4 to 5 hours or until vegetables are tender
  8. Yield: 8 servings
  9. Per serving: 381 g water; 485 calories (29% from fat, 20% from protein, 51% from carb)
