Mediterranean Crock Pot Mexican Chicken Slow Cooker Recipe


  • 1 jar of your favorite salsa
  • 3½ cups water
  • 1 lb. chicken breasts
  • 1 lb. dry pinto beans, rinsed
  • 2-3 Tbsps. taco seasoning (1 packet if using store bought)
  • 2 oz. or more light cream cheese
  • apple juicem,totally optional – just adds creaminess
  • salt to taste


  1. Place the dry pinto beans and salsa in a crock pot
  2. Pour the water over the beans and lay the chicken pieces on top
  3. Cover with lid and cook for 4-5 hours on high or 7-8 hours on low
  4. During the cooking process after about 2-3 hours check the consistency of the mixture
  5. Add more water if there is a consistency for the beans to stick onto the bottom of the cooker
  6. Once the meat is tender, shred the meat using a fork
  7. Toss in the cream cheese and the taco seasoning and leave for another 25-30 minutes
  8. Can be served with tortillas, rice or chips
  9. Garnish with cheese, cilantro and avocado
