Melon Muffins Recipe


Servings : 12 muffins.

  • 1 cup whole wheat flour
  • ½ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 pinch ground ginger
  • 1 small melon, peeled and cubed
  • ¼ cup agave syrup
  • 1 teaspoon vanilla extract
  • ¼ cup coconut oil


  1. Mix the melon with the agave syrup, vanilla and coconut oil in a blender
  2. Puree until smooth and then stir in the flours, baking soda, salt, and ginger
  3. Spoon the batter into your muffin cups lined with muffin papers and bake in a preheated oven at 350°F for 25 minutes or until the surface turns golden brown
