Mixed Squash Casserole Slow Cooker Recipe
Ingredients
- 1½ cups (180 g) sliced zucchini
- 1½ cups (180 g) sliced yellow squash
- 1 cup (180 g) peeled and chopped tomatoes
- ¼ cup (25 g) sliced scallions
- ½ cup (75 g) chopped green bell pepper
- ¼ cup (60 ml) low-salt chicken broth
- ¼ cup (30 g) bread crumbs
Method
- In slow cooker, layer half the zucchini, squash, tomatoes, scallions, and green pepper
- Repeat layers
- Pour broth over vegetables
- Sprinkle bread crumbs over top
- Cover and cook on low 4 to 6 hours
- Yield: 8 servings
- Per serving: 79 g water; 28 calories (11% from fat, 17% from protein, 72% from carb)
