Multi-Grain Rice Japgok-Bap Pressure Cooker Recipe

Ingredients

SERVES 6 to 8 – Cooker: 5- to 7-quart – Time: 6 minutes at HIGH pressure

  • 1½ cups mixed grains and legumes
  • 2 cups white short-grain Japanese-style rice, rinsed
  • 1½ tablespoons olive oil or plain sesame oil
  • 1 or 2 (3-finger) pinch(es) sea salt or Himalayan pink salt
  • 4 cups spring or filtered water

Method

  1. Rinse the mixed grains several times until the water runs clear and soak them in water to cover for 30 minutes to 1 hour
  2. Drain
  3. Combine the soaked mixed grains and legumes, rice, oil, salt, and water in a 5 to 7-quart pressure cooker that has been sprayed with nonstick cooking spray
  4. Close and lock the lid
  5. Place a heat diffuser on the burner and the pressure cooker on the diffuser
  6. Set the burner heat to high
  7. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  8. Set a timer to cook for 6 minutes
  9. Remove the pot from the heat
  10. Open the cooker with the Natural Release method; let stand for 15 minutes
  11. Be careful of the steam as you remove the lid
  12. Gently stir to fluff and combine the grains and legumes and serve
