Peanut Butter Chocolate Buckeyes Recipe

Ingredients

Makes about 2 dozen pieces

  • 1/4 cup vegan margarine, room temperature
  • 1 1/4 cups confectioners sugar
  • 1 cup creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • 8 ounces vegan semisweet chocolate chips

Method

  1. Lightly grease a baking sheet and set aside
  2. In a large bowl, combine the margarine, sugar, peanut butter and vanilla and cream together until well mixed
  3. Use your hands to roll the dough into small balls
  4. Insert a toothpick into the top of each ball and place them on the baking sheet
  5. Put them in the freezer to firm up
  6. Melt the chocolate chips in a double boiler or microwave
  7. * Remove the peanut butter balls from the freezer and dip them into the melted chocolate, leaving the top circle of each ball uncoated
  8. Place the coated balls back on the baking sheet and refrigerate just long enough so they begin to firm up
  9. Remove the toothpicks and smooth the tops to cover the holes left by the toothpicks
  10. Return to the refrigerator to continue firming up, about 1 hour
  11. Store in an airtight container
