Persimmon Cheesecake Recipe

Ingredients

For Crust:

  • 2 cups finely chopped walnuts
  • 1/3 cup brown sugar
  • 3 tablespoons melted butter
  • 2 cups pureed persimmons
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/4 cups white sugar
  • 3/4 cup sour cream
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 6 eggs

For Topping:

  • 1 1/4 cups sour cream
  • 3 tablespoons white sugar
  • 1 teaspoon vanilla extract

Method

  1. Preheat oven to 325F
  2. In a large bowl, combine walnuts, brown sugar and butter
  3. Press into the bottom of a 9 inch springform pan
  4. Bake for 12 minutes
  5. In a food processor, combine persimmons, cream cheese, sugar, sour cream, cinnamon and ginger and process until smooth
  6. Add in eggs one at a time and pulse until just combined
  7. Pour mixture into crust
  8. Bake 65 to 75 minutes, until almost set
  9. In a medium bowl, whisk together sour cream, sugar and vanilla
  10. Spread evenly over cheesecake
  11. Bake an additional 10 minutes
  12. Cool, cover and refrigerate overnight
