Ingredients
Makes 4 servings
- 1 tablespoon olive oil
- 1 medium red onion, minced
- 2 medium yellow summer squash or zucchini, chopped
- salt and freshly ground black pepper
- 1 1/2 cups quinoa, well rinsed
- 3 cups vegetable broth or water
- 1 cup ripe grape or cherry tomatoes, quartered
- 1/4 cup chopped fresh basil
Method
- In a large saucepan, heat the oil over medium heat
- Add the onion, cover and cook until tender, 10minutes
- Add the squash and season with salt and pepper to taste
- Cook, uncovered, until softened, 5 minutes
- Stir in the quinoa, then add the broth and bring to a boil
- Reduce heat to low, add salt to taste, cover and simmer until the quinoa has absorbed all the liquid, 20 to 30 minutes
- When ready to serve, transfer to a serving bowl and stir in the tomatoes and basil
- Serve immediately
