Tomato Tart



  • 2 cups flour
  • 2 tbsp. sugar
  • 1/3 cup solid shortening
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 3/4 cup milk


  • 5 medium ripe tomatoes
  • 1/2 tsp. basil
  • 3/4 tsp. salt
  • 1/4 tsp. pepper


  1. Sift flour, salt, sugar and baking powder together in medium bowl
  2. Cut shortening in well
  3. Stir in milk until soft dough forms
  4. Cover and put in warm area to rise slightly while making filling and topping
  5. Chop tomatoes into bite-sized pieces
  6. Toss with basil, salt and pepper


  1. Mix together 1 cup mayonnaise, 1 cup grated Swiss cheese, and 1 cup grated cheddar cheese
  2. Preheat oven to 450F
  3. Lightly grease 2-qt baking dish
  4. Press dough around bottom and up sides
  5. Bake about 810 minutes until crust puffs up and turns light golden brown
  6. Remove from oven; press down crust with back of spoon
  7. Pour filling into crust
  8. Add topping; spread to sides to seal
  9. Turn oven down to 400F
  10. Bake tart 15 minutes or until crust is browned and topping is puffy and lightly browned
