Ropa Vieja Shredded Flank Steak Pressure Cooker Recipe


SERVES 6 – Cooker: 5- to 7-quart – Time: 30 minutes at HIGH pressure

  • 1 (2-pound) flank steak, 1 to 2 inches thick
  • sea salt
  • 1 medium white onion, sliced
  • 1 large green bell pepper, seeded and chopped
  • 2 cloves garlic, minced
  • ¼ teaspoon dried oregano, preferably Mexican
  • ¼ teaspoon ground cumin
  • 1 bay leaf
  • ¼ teaspoon freshly ground black pepper
  • 1 (10-ounce) can tomatoes and green chiles (Rotel brand), undrained
  • 1 cup low-sodium chicken broth
  • 3 tablespoons tomato paste
  • 2 to 3 tablespoons fresh lime juice, to taste
  • 2 to 4 teaspoons hot sauce (such as Cholula), to taste


  • canola or vegetable oil.
  • 1 ripe (black) plantain per person, peeled and cut across or on the diagonal into ¼-inch-thick slices
  • sea salt (optional)


  1. Season the meat all over with salt
  2. Place the flank steak, onion, green pepper, garlic, oregano, cumin, bay leaf, pepper, tomatoes and chiles with their juice, and broth in a 5- to 7-quart pressure cooker
  3. Bring to a boil over medium-high heat
  4. Place the tomato paste on top; do not stir it in
  5. Close and lock the lid
  6. Set the burner heat to high
  7. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  8. Set a timer to cook for 25 minutes
  9. Remove the pot from the heat
  10. Open the cooker with the Natural Release method; let stand for 15 minutes
  11. Be careful of the steam as you remove the lid
  12. Discard the bay leaf
  13. Add the lime juice and hot sauce to taste, stirring it into the cooking liquid
  14. Remove the flank steak to a cutting board with tongs and let it rest briefly
  15. Trim off any fat, pull the beef apart with two forks into shreds 2 inches wide, and coarsely chop the shreds
  16. Skim any fat from the top of the sauce
  17. Add the shredded meat back into the pot
  18. When ready to serve the ropa vieja, fry the plantains
  19. Add enough oil to a large skillet to just coat the bottom of the pan and place over medium heat
  20. When the oil begins to shimmer, add the plantain slices in a single layer (work in batches), and fry for 1½ minutes, then flip the slices over with a spatula and cook for 1 minute on the other side
  21. Transfer the cooked plantains to paper towels to drain
  22. Continue frying in batches until all the plantains are fried
  23. Sprinkle lightly with sea salt, if you like
  24. Serve the ropa vieja from the pressure cooker with the fried plantains on the side
