Salsa Slow Cooker Recipe

Ingredients

  • 3 pounds (1.4 kg) plum tomatoes, peeled and chopped
  • ½ cup (86 g) black beans, cooked
  • ½ cup (82 g) frozen corn
  • 1 can (8 ounces, or 225 g) no-salt-added tomato sauce
  • chili pepper
  • ¼ cup (60 ml) red wine vinegar
  • ½ cup (80 g) chopped onion
  • 1 tsp minced garlic
  • 1½ teaspoons cilantro
  • ½ teaspoon oregano
  • 1½ teaspoons cumin

Method

  1. Combine all ingredients in a large pot
  2. Simmer until desired thickness, about 15 minutes
  3. Pack into jars and store in refrigerator
  4. Makes about 3 pints
  5. Yield: 48 servings
  6. Per serving: 37 g water; 18 calories (7% from fat, 19% from protein, 74% from carb)
