Simple Vegan Cornbread Recipe

Ingredients

Makes 1 loaf

  • 1 1/2 cups warm plain soy milk
  • 1 tablespoon cider vinegar 1 1/2 cups yellow cornmeal
  • ¾ cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup olive oil

Method

  1. Preheat the oven to 375°F
  2. Lightly oil an 8-inch square baking pan and place it in the oven while you prepare the batter
  3. In a small bowl, combine the soy milk and vinegar and set aside
  4. In a large bowl, combine the cornmeal, flour, sugar, baking powder and salt
  5. Stir in the soy milk mixture and the oil and mix well with a few quick strokes
  6. Remove the hot pan from the oven and scrape the batter into the hot pan
  7. Bake until golden brown and a toothpick inserted in the center comes out clean, about 30 minutes
  8. Cool for 10 minutes
  9. Serve warm
