Smoothies In Winter Recipe

Ingredients

Makes 2 to 3 servings

  • ¾ cup canned solid-pack pumpkin
  • 1 frozen ripe banana, cut into chunks
  • 1/3 cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 cups chilled plain or vanilla soy milk or other nondairy milk

Method

  1. In a blender or food processor, combine the pumpkin, banana, maple syrup, vanilla, cinnamon, 1/4 teaspoon of the nutmeg and 1 cup of the soy milk
  2. Blend until smooth
  3. Add the remaining soy milk and blend until smooth
  4. Pour into glasses and sprinkle the tops with the remaining 1/4 teaspoon nutmeg
  5. Serve immediately
