For the crust

  • 11/4 pounds boneless, skinless chicken breasts, cut into large chunks
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried sage
  • pinch of black pepper

For the topping

  • 3 tablespoons reduced-calorie pizza sauce
  • 1/4 cup grated parmesan cheese (optional)
  • 1/4 cup chopped fresh basil
  • 1/2 cup shredded reduced-fat mozzarella cheese
  • 1/2 red bell pepper, seeded and chopped
  • garnish: red pepper flakes, dried chives

Method

  1. Preheat the oven to 450°F
  2. Line a baking sheet with parchment paper
  3. To make the crust, add the chicken, parmesan, oregano, rosemary, sage, and black pepper to a food processor or high-powered blender
  4. Pulse until mixed and minced
  5. Put the pizza crust on the baking sheet and mash it down with a spatula to form a thin circle or large rectangle less than 1/4 inch thick
  6. Bake in the oven for 13 to 15 minutes, or until the edges have browned and the chicken has cooked through
  7. If at the end of baking there is liquid in the pan, I recommend removing the chicken crust from the original piece of parchment paper and replacing the wet paper with a dry one before adding the toppings
  8. Top the crust with the pizza sauce, parmesan (if using), basil, mozzarella, and bell pepper; feel free to add your own low-calorie ingredients
  9. Bake in the oven until the cheese has melted, browned, and bubbled, about 8 minutes
  10. Remove from the oven, allow to cool slightly, garnish, slice, and enjoy!
  11. Allowing the pizza to cool slightly will make it much easier to handle and hold like traditional pizza
