Southern Banana Corn Waffles Recipe

  • 11/2 cups oat flour or all-purpose wheat flour
  • 1/3 cup fine yellow cornmeal
  • 2 teaspoons baking powder
  • pinch of sea salt.
  • 1 egg
  • 2 egg whites
  • 1/2 teaspoon (2 g) stevia in the raw or 1/4 cup coconut sugar
  • 11/8 cups unsweetened almond milk
  • 2 tablespoons 2% Greek yogurt
  • 2 tablespoons melted coconut oil or olive oil
  • 1 large ripe banana, mashed
  • 1/3 cup canned corn, drained
  • olive oil spray.
  • garnish: reduced-calorie maple syrup or fresh berries.

Method

  1. Preheat a waffle iron until hot
  2. Mix together the oat flour, cornmeal, baking powder, and salt in a large bowl
  3. In a separate medium bowl, beat the egg and egg whites together until frothy
  4. Then, add the stevia, almond milk, yogurt, and coconut oil to the bowl and mix everything together until it’s a smooth consistency
  5. Add the wet ingredients to the dry ingredients and mix together, being careful not to overmix
  6. Small lumps are okay! Fold in the banana and corn
  7. Spray the hot waffle iron with olive oil spray
  8. Add about 1/2 cup of the batter to the waffle iron, close the lid, and cook for 5 to 8 minutes, or until the edges of the waffle are golden brown
