Stewed Tomatoes Slow Cooker Recipe

Ingredients

  • 2 large tomatoes
  • 1 cup (160 g) chopped onion
  • ¾ cup (75 g) chopped celery
  • ½ cup (75 g) chopped green bell pepper
  • 2 tbsps (39 g) sugar
  • bay leaf
  • 1/8 teaspoon black pepper

Method

  1. Core tomatoes; place in boiling water for about 15 to 20 seconds and then plunge into ice water to cool quickly; peel
  2. Cut tomatoes in wedges
  3. In slow cooker, combine tomatoes and remaining ingredients
  4. Cover and cook on low 8 to 9 hours
  5. Remove bay leaf
  6. Serve as a side dish or freeze in portions for soups or other recipes
  7. Yield: 6 servings
  8. Per serving: 141 g water; 61 calories (5% from fat, 8% from protein, 87% from carb)
