Summerland Chili Recipe


  • 1 log Jimmy Dean hot sausage
  • 1 onion, chopped
  • 4 cloves garlic (or two tsp. of the bottled stuff)
  • 2 bottles beer (you can use dark beer for stronger flavor)
  • 2 whole dried poblano chilies
  • 2 whole fresh chilies
  • 5-6 dried serrano chilies
  • 2 tsp. chopped jalapeno chilies
  • 4 tbsp. chili powder
  • 2 tsp. cayenne pepper
  • 2 tbsp. crushed red pepper (dried)
  • 2 tbsp. basil (fresh or dried)
  • 2 cans kidney beans
  • 2 cans black beans
  • 2 cans diced tomatoes
  • 1 small can tomato sauce


  1. Cook sausage, onion and garlic over medium heat until meat is brown and crumbly
  2. Drain
  3. While meat mixture is cooking, pour beer into large pot
  4. Add all chilies and spices and bring to a boil, then simmer
  5. When meat mixture is cooked, add to pot
  6. Drain and rinse beans and add to pot
  7. Add canned tomatoes (do not strain), and tomato sauce
  8. Stir, then simmer for at least 1 hour (preferably 90 minutes) to allow the flavors to blend
  9. If it gets too thick, just add another beer!
