Swiss Steak Slow Cooker Recipe

Ingredients

  • ¼ cup (31 g) flour
  • 1 pound (900 g) round steak
  • 2 tbsps (28 ml) olive oil
  • 1 cup (160 g) sliced onion
  • 1 cup (150 g) green bell pepper strips
  • ½ cup (65 g) sliced carrots
  • ½ cup (50 g) chopped celery
  • 1 tsp finely minced garlic
  • 1½ cups (355 ml) low-salt beef broth
  • 2 cups (360 g) no-salt-added diced tomatoes, drained
  • 1 tbsp (15 g) brown sugar

Method

  1. Put the flour in a flat dish
  2. Pound the meat using a meat tenderizer for a few minutes and then dredge the meat in the flour and pound it in
  3. Heat oil in a large skillet
  4. Add the meat and brown on both sides
  5. Remove the meat from the skillet and add it to your slow cooker
  6. Add the onions, green pepper, carrots, and celery to the skillet and brown
  7. Put them into your slow cooker
  8. Add the beef broth to the skillet and cook over medium heat, scraping the bottom to get all the browned bits
  9. Add this to your cooker along with the tomatoes and brown sugar
  10. Cook on low for 8 to 10 hours
  11. Yield: 6 servings
  12. Per serving: 324 g water; 433 calories (35% from fat, 51% from protein, 14% from carb)
