Ingredients

Makes 8 servings (about 2 quarts)

  • 2 pounds ground beef
  • 1 envelope taco seasoning or make your own (See Below)
  • 1-1/2 cups water
  • 1 can (16 ounces) mild chili beans, undrained
  • 1 can (15-1/4 ounces) whole kernel corn, drained
  • 1 can (15 ounces) pinto beans, rinsed and drained
  • 1 can (14-1/2 ounces) stewed tomatoes
  • 1 can (10 ounces) diced tomato with green chiles
  • 1 can (4 ounces) chopped green chiles, optional
  • 1 envelope ranch salad dressing mix or make your own (See Below)

Taco Seasoning :Makes 6 tablespoons

  • 8 teaspoons dried minced onion
  • 2 tablespoons chili powder
  • 2 teaspoons cornstarch
  • 2 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper

Ranch Seasoning :Makes 6 tablespoons

  • 2 tablespoons plus 2 teaspoons dried minced onion
  • 1 tablespoon dried parsley flakes
  • 2-1/2 teaspoons paprika
  • 2 teaspoons sugar
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 1-1/2 teaspoons garlic powder

Method

  1. In a Dutch oven, cook beef over medium heat until no longer pink; drain
  2. Add taco seasoning and mix well
  3. Stir in the remaining ingredients
  4. Bring to a boil
  5. Reduce heat; simmer, uncovered, for 45 minutes or until heated through, stirring occasionally In a slow cooker, 1 hour on high, 2 hour on low
