Ingredients

- 2 packages active dry yeast
- 1 cup sifted all purpose flour
- 1 1/2 cups whole wheat flour
- 1/2 cup rye flour
- 2 cups milk
- 1/2 cup brown sugar
- 3 tablespoons shortening
- 2 tablespoons granulated sugar
- 1 teaspoon salt
Method
- Heat milk, brown sugar, shortening, sugar and salt together, stirring just till warm.
- Add to dry mixture.
- Beat at low speed of electric mixer for 1/2 minute, scraping bowl constantly.
- Beat 3 minutes at high speed.
- Stir in an additional 2 1/4 to 2 1/2 cups sifted all-purpose flour, enough to make a moderately stiff dough.
- Turn onto floured surface; knead 8 to 10 minutes.
- Place in greased bowl, turning once.
- Cover; let rise till double (about 1 1/2 hours).
- Punch down; let rest 10 minutes.
- Shape into two loaves.
- Place in 2 greased 8 1/2x4x3-inch loaf pans.
- Let rise 45 minutes to 60 minutes.
- Bake in 375 degree oven for 40 minutes.
