Three Flour Bread Recipe

Ingredients

  • 2 packages active dry yeast
  • 1 cup sifted all purpose flour
  • 1 1/2 cups whole wheat flour
  • 1/2 cup rye flour
  • 2 cups milk
  • 1/2 cup brown sugar
  • 3 tablespoons shortening
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt

Method

  1. Heat milk, brown sugar, shortening, sugar and salt together, stirring just till warm.
  2. Add to dry mixture.
  3. Beat at low speed of electric mixer for 1/2 minute, scraping bowl constantly.
  4. Beat 3 minutes at high speed.
  5. Stir in an additional 2 1/4 to 2 1/2 cups sifted all-purpose flour, enough to make a moderately stiff dough.
  6. Turn onto floured surface; knead 8 to 10 minutes.
  7. Place in greased bowl, turning once.
  8. Cover; let rise till double (about 1 1/2 hours).
  9. Punch down; let rest 10 minutes.
  10. Shape into two loaves.
  11. Place in 2 greased 8 1/2x4x3-inch loaf pans.
  12. Let rise 45 minutes to 60 minutes.
  13. Bake in 375 degree oven for 40 minutes.
