Tofu Sour Cream Recipe


Makes about 1 1/2 cups

  • 1 cup silken tofu, well drained
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons canola or grapeseed oil
  • 2 teaspoons cashew butter or tahini (sesame paste)
  • 1/4 teaspoon yellow mustard
  • 1/2 teaspoon salt


  1. In a blender or food processor, combine all the ingredients and process until smooth
  2. Scrape the mixture into a container with a tight-fitting lid, cover and refrigerate until needed
  3. Properly stored, it will keep for 3 to 4 days
