Tofu-Tahini Veggie Wraps Recipe

Ingredients

Makes 4 wraps

  • 8 ounces extra-firm tofu, drained and patted dry
  • 1/2 cup tahini (sesame paste)
  • 3 green onions, minced
  • 2 celery ribs, minced
  • 1/2 cup minced fresh parsley
  • 2 tablespoons capers
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground cayenne
  • 4 (10-inch) flour tortillas or lavash
  • 1 medium carrot, shredded
  • 4 lettuce leaves

Method

  1. In a food processor, combine the tofu, tahini, green onions, celery, parsley, capers, lemon juice, mustard, salt and cayenne and process until well combined
  2. To assemble wraps, place 1 tortilla on a work surface and spread about 1/2 cup of the tofu mixture across the tortilla
  3. Sprinkle with shredded carrot and top with a lettuce leaf
  4. Roll up tightly and cut in half diagonally
  5. Repeat with the remaining ingredients and serve
