Tofu With Lemongrass Snow Peas Recipe

Ingredients

Makes 4 servings

  • 3 tablespoons canola or grapeseed oil
  • 1 medium red onion, halved and thinly sliced
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1 pound extra-firm tofu, drained and cut into 1/2-inch dice
  • 3 tablespoons soy sauce
  • 1 tablespoon mirin or sake
  • 1 teaspoon sugar
  • 1/2 teaspoon crushed red pepper
  • 8 ounces snow peas, trimmed
  • 1 tablespoon minced lemongrass or zest of 1 lemon
  • 2 tablespoons coarsely ground unsalted roasted peanuts, for garnish

Method

  1. In a large skillet or wok, heat the oil over medium-high heat
  2. Add the onion, garlic and ginger and stir-fry for 2 minutes
  3. Add the tofu and cook until golden brown, about 7 minutes
  4. Stir in the soy sauce, mirin, sugar and crushed red pepper
  5. Add the snow peas and lemongrass and stir-fry until the snow peas are crisp-tender and the flavors are well blended, about 3 minutes
  6. Garnish with peanuts and serve immediately
