Ingredients
- 475 ml low-salt tomato juice
- 1 can (6 ounces, or 170 g) no-salt-added tomato paste
- 390g tuna, drained and rinsed
- 2 tbsps (30 g) dried minced onion
- ¼ teaspoon garlic powder
- green bell peppers, tops removed and seeded
Method
- Mix tomato juice and tomato paste, reserving 1 cup (235 ml)
- Mix remaining tomato mixture with tuna, minced onion, and garlic powder
- Fill peppers equally with mixture
- Place upright in slow cooker
- Pour the reserved 1 cup (235 ml) tomato mixture over peppers
- Cover and cook on low 8 to 9 hours or until peppers are done
- Yield: 4 servings
- Per serving: 359 g water; 222 calories (14% from fat, 48% from protein, 39% from carb)
- Serve with rice or noodles
