Ingredients

- 2 large potatoes
- 2 tablespoons butter
- 1 large clove garlic – minced
- 2 tablespoons flour
- 1/2 cup chicken broth
- 1/2 cup milk or half and half
- 1/2 cup monterey jack cheese – 2 oz
- 1 can diced jalapeno,chilies – un
- 2 tablespoons minced scallions – green parts
- salt to taste
- fresh ground white pepper to
- 1 can tuna – drained 6 to 7 oz
Method
- Wash and dry potatoes well.
- Rub each with 1 1/2 tsp butter.
- Bake potatoes in a 425 degreesoven 30 minutes.
- Remove and pierce in a few places with fork tines.
- Return to oven and continue baking until potatoes are tender,about 30 minutes longer.
- About 15 minutes before potatoes are done,melt remaining 1 1/2 tabls butter in medium pan
- Add garlic and saute over medium heat 2 to 3 minutes.
- Add flour and stir to form a paste.
- Gradually stir in chicken broth and milk,stirring constantly.
- Cook over medium heat,stirring frequently,until mixture is thickened and smooth.
- Stir in cheese and cook over low heat until cheese melts.
- Stir in chilies with any liquid and scallions.
- Season to taste with salt and pepper.
- Simmer,uncovered,5 minutes,stirring occasionally.
- To serve,split each potato in halF
- Arrange two halves to a plate.
- Make a vertical slash in each potato halF
- Fill each with 1/4 of the tuna.
- Spoon some or all of cheese sauce.
