Vanilla Muffins Recipe


Servings : 16 muffins.

  • 2½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 pinch salt
  • ½ cup agave syrup
  • 2 cups coconut milk
  • ½ cup water
  • 1 teaspoon vinegar
  • 1 tablespoon vanilla extract
  • ½ cup coconut oil
  • 1 vanilla pod, split lengthwise


  1. Mix the flour with the baking soda, baking powder and salt
  2. Set aside
  3. In a different bowl, combine the agave syrup with the coconut milk, water, vinegar, vanilla extract, coconut oil, and the seeds from the vanilla pod
  4. Pour this mixture over the dry ingredients and mix really well
  5. Spoon the batter into your muffin pans and bake in a preheated oven at 350°F for 20-30 minutes until the muffins turn slightly golden brown and fragrant
  6. Allow the muffins to cool in the pan before serving
