Vegan Aioli Recipe

Ingredients

Makes about 1 1/2 cups

  • 1/2 cup slivered almonds
  • 3 garlic cloves, crushed
  • 1/3 cup water
  • 1/2 teaspoon Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons agave nectar
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground cayenne
  • 1/3 cup olive oil

Method

  1. Place the almonds in a medium bowl
  2. Cover with water and soak overnight
  3. Drain the soaked almonds and transfer them to a blender
  4. Add the garlic, water, mustard, lemon juice, agave nectar, salt and cayenne and blend until smooth and creamy
  5. With the blender running, stream in the oil, blending until the mixture thickens
  6. Transfer to a medium bowl
  7. If not using right away, cover and refrigerate until needed
  8. Properly stored, the sauce will keep for 2 to 3 days
