Vegan Bordelaise Sauce Recipe

Ingredients

Makes about 2 1/2 cups

  • 1 tablespoon olive oil
  • 1/4 cup minced shallots
  • 1/2 cup chopped white mushrooms
  • 1/2 cup dry red wine
  • 1/2 teaspoon minced fresh thyme or 1/4 teaspoon dried
  • 1/4 teaspoon freshly ground black pepper
  • 2 cups Basic Brown Sauce

Method

  1. In a medium saucepan, heat the oil over medium heat
  2. Add the shallots and cook until softened, about 5 minutes
  3. Stir in the mushrooms and cook 1 minute
  4. Add the wine, thyme and pepper and simmer until the liquid is reduced by half
  5. Stir in the brown sauce and simmer until hot
  6. Serve immediately
  7. If not using right away, cool the sauce to room temperature, transfer to a container, cover and refrigerate until needed
  8. Properly stored, the sauce will keep for 2 to 3 days
  9. Reheat the sauce in a saucepan over low heat until hot
