Ingredients
- 2 tablespoons vegetable oil
- 1 clove garlic — minced
- 1/2 red bell pepper — sliced in 1/4″
- — strips
- 1/2 yellow bell pepper — sliced in 1/4″

- 1 cup Chinese pea pods
- 1 cup brown mushrooms — sliced
- 2 cups surimi seafood
- 1/2 cup green onions — sliced
- salt and pepper
- 2 tablespoons sesame seeds — toasted
- hot cooked rice
Method
- Place oil in skillet or wok and heat until very hot
- Add garlic and stir-fry for 30 seconds
- Add red and yellow pepper strips, pea pods and mushrooms
- Stir-fry for 1 minute, then add 2 tbsp water, cover and cook 2 minutes longer, stirring frequently until vegetables are crisp-tender
- Add surimi and green onions
- Stir-fry 1 minute longer
- Season to taste with salt and pepper
- Sprinkle with sesame seeds and serve on hot cooked rice
