Strawberry Sponge Cake

Ingredients

  • 1 tsp vanilla essence
  • 1 (85g) package strawberry flavoured jelly mix (recommended: Jell-O)
  • fresh strawberries, :for garnish
  • 30g icing sugar
  • 240ml double cream
  • 500g fresh strawberries, sliced
  • 2 tbsp cognac
  • 50g caster sugar
  • 1 (520g) box strawberry cake mix

Method

  1. Preheat oven to 180C/Gas 4
  2. Follow cake directions as written on cake mix box
  3. Remove from oven and cool cake completely
  4. Meanwhile, in a medium bowl, combine strawberries, cognac and sugar
  5. Let macerate 20 mins
  6. Invert and release cake onto a decorative platter
  7. Whip cream with icing sugar and vanilla at medium-high speed until it reaches stiff peaks
  8. Do not over whip
  9. Make jelly as directed on box
  10. Refrigerate jelly mix but do not let it harden, it should cool to a liquid consistency
  11. Using a straw, poke holes all over the cake
  12. Pour jelly into holes and spread over the top of the cake
  13. Spread layer of macerated strawberries on top of cake
  14. Spread layer of whipped cream on top of the strawberries, making pretty swirls and ripples
  15. Garnish with fresh strawberries
  16. Refrigerate for at least 4 hrs
