Winter Cilantro-Lime Salsa Pressure Cooker Recipe


Makes about 3 cups

  • 2 (14.5-ounce) cans fire-roasted or plain diced tomatoes in juice, well drained
  • 1 medium white onion, finely chopped
  • 2 cloves garlic, finely chopped
  • ½ cup chopped fresh cilantro
  • juice of 2 limes.
  • grated zest of 1 lime.
  • salt to taste.
  • 1 to 2 jalapeno or serrano peppers, to taste, seeded and finely chopped


  1. In a medium bowl, combine all the ingredients
  2. Cover and refrigerate for a couple of hours to allow the flavors to develop
