Lemon Onion Mayo Dip

  

Lemon onion mayo combines creamy mayonnaise, fresh lemon juice/zest and onion to create a light, savory dipping sauce or spread, perfect for sandwiches or dip with nachos.

Ingredients

  • 1/2 cup Mayonnaise
  • 1 tbsp Lemon juice (plus zest for extra flavor)
  • 1 small onion (or finely minced green onions )
  • 1/4 tsp Garlic powder  or 1 clove fresh garlic (optional)
  • Salt and black pepper

Method

  1. Soak the onions in the lemon juice for 30 minutes.
  2. In a small bowl, drain off the lemon juice and whisk with the mayonnaise and zest.
  3. Stir in the onions.
  4. Add salt and pepper to taste.
  5. Chill for at least 30 minutes to allow the flavors to meld.

Serving Suggestions

  • Dip: Ideal for onion rings, French fries, fish goujons or grilled shrimp.
  • Spread: Great on burgers, chicken sandwiches or fish dishes.
  • Salad Base: Use as a dressing for potato or tuna salad.

  • ¼ tsp Worcestershire sauce, optional

Substitute for Worcestershire Sauce
Makes 100 ml
5 tbsp soy sauce, 5 tsp lemon juice and a little sugar.

Method

  1. Combine and chill 2 hours before use.
  2. Adjust ratio of ingredients to taste.
  3. If you like it thinner you can use white wine or lemon juice.

Canarian Tomato Jam

Canarian Recipes:  Mermelada De Tomate 

Canarian Tomato Jam (Mermelada de Tomate) is a traditional, sweet-and-sour condiment from the Canary Islands, commonly paired with cheeses, specifically soft goat cheese or blue cheese.

Ingredients

  • 500 g of tomatoes (after peeling)
  • 250 g of sugar
  • Juice of 1 lemon (optional)
  • Ginger or Cinnamon, to taste, (optional)

Method

  • Peel and chop all the tomatoes.
    Add the chopped tomatoes, sugar and lemon juice to a saucepan.
  • Let it sit for 2 or 3 hours.
  • Then put the pot on low heat and stir constantly.
  • It will take about 45 minutes.
  • Put through a sieve if you want a smooth consistancy.

Serve with

  • Bread
  • Blue Cheese or Goat Cheese
  • Burgers
  • Almost any meat

TIPS

  • If you find it a bit difficult to peel the tomatoes, we recommend that you make a cross at the base, put water to boil and heat them for a few seconds. This way you will have no problems removing the skin.
  • Remove the jam from the heat a few minutes before it reaches the right thickness, as it will become even more compact and consistent as it cools.
  • Check its thickness by dropping a few drops. If they are liquid, it will need more time. If, on the other hand, they fall slowly and clump together, it means that the tomato jam is ready.
  • Sieving (if you don’t like the seeds) is better than blending as the pips can alter the taste.

Ingredients

  • 1 aubergine
  • 2 to 3 tbsp tahini paste, optional
  • 1 tomato diced
  • 1 onion diced
  • 2 cloves garlic, minced
  • ½ lemon juiced
  • 1-2 tbsp olive oil
  • herbs, salt, cayenne pepper, to taste

Method

  1. Roast the aubergine on high for about 15 minutes until the skin is burnt and the pulp is soft and tende
  2. Peel off the skin then mash it using a blender, fork or a potato masher.
  3. Add tomato, onion, garlic, lemon juice, olive oil, seasoning and blend.
  4. Chill.
  5. To serve, drizzle with a little bit of olive oil, and garnish.
  6. Serve with bread or vegetables.

Tips

  • Quick Fix for Watery Result: Mix with Greek yogurt and a bit more garlic and/or more tahini will make it thicken up.
  • Salting eggplant draws out the moisture, allowing it to get crispy and caramelized on the exterior, and keeping it from getting soggy in the final dish. Some say it removes bitter flavors, but since bitterness has been bred out of most modern eggplants, salting is primarily about texture.
