Ginger and Applesauce Cake

Ginger And Applesauce Cake

Ingredients

Servings : 2-4 dishes.

  • 2 cups whole wheat flour
  • 1 cup sugar
  • 2 oz candied ginger, chopped
  • 2 tablespoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 1/2 cups applesauce
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • 2 tablespoons maple syrup

Method

  1. In a bowl, mix together the applesauce, lemon juice and vanilla
  2. Stir in the sugar, flour, cornstarch, baking soda and powder, cinnamon and a pinch of salt
  3. Mix well then fold in the candied ginger
  4. Pour this batter into a round cake pan, lined with parchment paper
  5. Bake the cake in a preheated oven at 350F for 30-40 minutes
  6. To check if it’s done, insert a skewer into the center
  7. If it comes out clean, the cake is done, if not, bake it 10 more minutes
  8. Let it cool in the pan then powder it with sugar and serve cut into slices
