Eggs With Brioche And Caramelized Onions


Serves 6

  • 6 slices brioche loaf
  • 2 tbsps. unsalted butter
  • 1 tbsp extra-virgin olive oil
  • 4 cups sliced onions
  • 1/4 cup creme fraiche
  • 2 tbsps. chopped chives
  • 6 large eggs


  1. Toast the brioche until just golden and keep warm
  2. Melt the butter in a large skillet over medium heat
  3. Stir in the oil
  4. Add the onions and cook over low heat, stirring often until golden and caramelized, about 20-25 minutes
  5. Remove from the heat and keep warm
  6. Whisk together the creme fraiche and chives in a small saucepan
  7. Heat over low until just warm, about 2-3 minutes
  8. Set aside
  9. Poach the eggs according to your preferred method
  10. Divide the onions evenly over the pieces of toast
  11. Make a well in the center of each and scoop 1 of the poached eggs into the middle
  12. Drizzle the creme fraiche evenly over the eggs to serve
