Vegan Basic Vanilla Cake

Ingredients

Servings : 4-6 dishes.

  • 3/4 cup brown rice flour
  • 1/2 cup tapioca flour
  • 1/2 cup almond meal
  • 1/2 cup coconut flour
  • 1 pinch of salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon xanthan gum
  • 2/3 cup coconut milk
  • 1 cup water
  • 1/4 cup coconut oil
  • 1/4 cup applesauce
  • 1 tablespoon vanilla extract
  • 1 teaspoon lemon juice

Method

  1. In a bowl, mix all the flours with the salt, baking powder, baking soda and xanthan gum
  2. In another bowl, combine the water with the coconut milk, coconut oil, applesauce, vanilla extract and lemon juice
  3. Pour it over the flour and mix until smooth
  4. Grease a 9-inch cake pan or line it with baking paper then pour the batter into the pan
  5. Bake in a preheated oven at 350F for 1 hour or until a skewer inserted in the middle of the cake comes out clean
  6. Let it cool in the pan before serving
